Silky smooth chocolate truffles flavoured with Baileys Irish Cream. Made from cream, milk chocolate and a little butter, these truffles have that squishy texture you're after. Coat in finely grated chocolate or desiccated coconut.

Gosh, these Baileys Chocolate Truffles are a little dangerous. Once that silky smooth chocolate melts in your mouth, it's very hard to stop at one!

- Baileys: The original Irish cream liqueur, Baileys adds a lovely sophisticated flavour to these truffles.
- Chocolate: My go-to for a sweet treat, Whittaker's Creamy Milk chocolate.
- Butter: I like a salted butter in this recipe - I think it compliments the sweet chocolate.

Step by step instructions:
Finely grate 4 pieces of the chocolate and set aside for the topping. Heat the cream in a saucepan until bubbles start to form.

Take off the heat and add the butter and chocolate. Stir until smooth then add the Baileys. Mix to combine.

Chill in the freezer for 30-45 minutes until solid. When the mixture has firmed up, roll into small balls with your hands. You may have to wash your hands with cold water if they get too warm while rolling.

Coat in grated chocolate or coconut then place in a lined container. Place in the fridge or freezer until they are firm. Keep the truffles in the fridge for up to 2 weeks. Serve chilled as they will go soft if left at room temperature for too long.

Storage:
Store your truffles in the fridge for up to 2 weeks! If you want them to last longer than that, you can freeze them for up to 6 months.
Top tips:
Don't go too crazy with the Baileys. Not because I'm judging you, but because too much alcohol can prevent the truffles from setting properly.

Soft and creamy chocolate truffles flavoured with Baileys.
Ingredients
- 360g chocolate, chopped
- 150ml cream
- 1 Tbsp butter
- 4 Tbsp Baileys
Coating
- Grated chocolate
- Desiccated coconut
Instructions

I made the Baileys Truffles today. I rolled them off two spoons and then into grated chocolate or chocolate sprinkles. I had to leave the mixture in the freezer and work from there as it was a warm day. Pretty messy procedure but I think everyone will love them. Nice licky fingers
