This is not your average pasta dish! We love making this most incredible tortellini dish on the Blackstone as a quick dinner with a punch of flavor. It’s a main course that never gets old and is really easy to adapt and change too. We love making the flavorful Blackstone sausage, but chicken and beef are also yummy with this dish.

Hearty dinners like Blackstone beef stir fry and Blackstone steak and potatoes are some of our favorite ways to save time and eat well on a busy evening. When we got the idea to make tortellini on the Blackstone, it turned out better than we could’ve imagined! We love to have leftovers of this dish because it’s too good to eat just once. You’re going to love the delicious flavor of this Blackstone tortellini and sausage.

Ingredients for Blackstone Tortellini

  • Kielbasa sausage – Slice up some kielbasa sausage or other favorite link sausage.
  • Shredded parmesan – Make this dish cheesy and comforting with some shredded parmesan.
  • Dried oregano – If you do not have dried oregano, you can use Italian seasoning in its place.
  • Italian dressing – Grab a bottle of your favorite Italian salad dressing at the grocery store or make your own homemade dressing!
  • Roasted red bell pepper – You’ll need an 8 oz can of roasted red bell peppers to add to this Blackstone tortellini recipe.
  • Extra virgin olive oil – Use olive oil or another neutral flavored oil to sauté the cheese tortellini.
  • Salt – A little salt will help bring out the flavors of all the ingredients in this dish.
  • Cherry tomatoes – Halve cherry tomatoes to add to this dish. You can also use diced tomatoes if you cannot find cherry tomatoes.
  • Minced garlic – Freshly minced garlic is sure to make your Blackstone tortellini full of flavor!
  • Fresh spinach – We do not recommend using frozen spinach as the texture could be pretty different after it’s cooked.
  • Cooked tortellini – Use any kind of tortellini you want! We like to use cheese tortellini, but anything will be tasty.

How to Make Blackstone Tortellini

  1. Heat your Blackstone griddle over medium high heat and then drizzle two tablespoons of oil over the top. Spread it out with the back of a spatula.
  2. Add the minced garlic and kielbasa to the hot cooktop and stir it around until the meat is cooked.
  3. Add the cheesy tortellini and halved tomatoes, then drizzle the rest of the olive oil over the top and sprinkle on some salt. Once that’s mixed together, add the fresh spinach.
  4. Mix in the red bell pepper, Italian dressing and oregano and cook until the tortellini is heated through and the spinach is slightly wilted.
  5. Remove from the Blackstone and place onto a pan. Then sprinkle the parmesan cheese over the top and serve!

How to Store Leftover Blackstone Tortellini

Transfer leftovers to an airtight container and allow to cool completely. Store in the fridge for 2-3 days. However, the sooner you eat the leftovers the better! The texture may begin to change the longer it is stored.

I do not recommend freezing this dish. To reheat, place in the microwave, oven or on the stove top with a bit of oil until warmed through.

What to Serve with Blackstone Tortellini

Homemade breadsticks and dinner rolls are two of my favorite sides to pair with this dish. But I also love some simple vegetable sides like bacon wrapped asparagus and grilled cauliflower.

Grilled zucchini and grilled asparagus would be amazing side dishes to serve alongside this Blackstone tortellini recipe too!

Can I cook pasta on a Blackstone griddle?

With recipes likes this, the tortellini will need to be cooked before going on the griddle. But yes, you can absolutely make pasta dishes on the Blackstone! Think of it kind of like noodles on a hibachi!

What can I add to this Blackstone tortellini and sausage recipe?

Feel free to add extra vegetables to this dish! Diced onions, sliced zucchini, mushrooms, and even broccoli would be tasty. Fresh herbs like thyme, parsley, and fresh basil would also be great. You can even add extra cheese! Fresh mozzarella balls or shredded mozzarella cheese would be a great addition.

Pro Tips for the Best Blackstone Tortellini

  • Make sure your pasta is cooked to a perfect al dente before adding it to the Blackstone! Overcooked pasta will become mushy after being cooked on the griddle.
  • It is important to have plenty of oil on the Blackstone top so that your sausage and tortellini does not stick.
  • Don’t overcook the spinach! Once it’s wilted, it’s ready. Overcooking can result in a strange texture.

Ingredients

  • 4 Tablespoons extra virgin olive oil divided
  • 2 teaspoons minced garlic
  • 1 pound kielbasa sausage cut into ½ inch pieces
  • 19 ounces cooked tortellini from the refrigerated section of the grocery store
  • 10 ounces cherry tomatoes cut in half
  • 1 teaspoon salt
  • 5 ounces fresh spinach
  • 8 ounces roasted red bell pepper chopped
  • cup Italian dressing
  • ½ teaspoon dried oregano
  • ¼ cup shredded Parmesan

Instructions

  • Set your Blackstone griddle on medium-high heat. Drizzle and spread 2 tablespoons of oil on the griddle top with the back of a spatula.

  • Add minced garlic and kielbasa sausage to hot griddle, stirring until the meat is cooked.

  • Mix in the tortellini and tomatoes. Drizzle the rest of the olive oil on top and sprinkle the salt on top. After mixing together, add the spinach.

  • Add roasted red bell pepper, Italian dressing, and sprinkle the oregano on top.

  • Cook until the tortellini is fully heated through and the spinach is slightly wilted.

  • Remove from the griddle and put in a pan. Sprinkle the Parmesan cheese on top and serve.
