If you are a meat and potatoes kind of person, or if you’re cooking for one, this recipe is definitely for you. There are lots of hamburger casserole recipes out there, but to me, this one is by far the easiest. It has few ingredients and can be made in a jiffy.

HAMBURGER CASSEROLE RECIPE

What can be better than potatoes, ground beef, and milk casserole with cheese to finish it off?

Wholesome ingredients that you probably already have in your pantry and freezer.

This is my go-to recipe when I really don’t want to think about what to cook.

My family loves it and it is so simple that it really is a breeze to cook and take to the table.

HAMBURGER CASSEROLE FLAVOR VARIATIONS:

The addition of chopped carrots or peas would do wonders for this dish.

If you want a spicy version, try adding some chopped jalapeno peppers. Using Cheddar cheese also gives this casserole a different flavor.

Adding bacon and cooked red beans would be a great idea too, along with some chili seasoning.

If you add chopped tomatoes and Italian herbs, you have a whole new dish.

The sky’s the limit. This is a blank palette kind of dish that transforms itself with the different ingredients you use.

WHAT SIDES GO WITH HAMBURGER CASSEROLE?

This dish has meat and carbs, so the only thing missing is the veggies.

I would recommend serving this with steamed veggies like broccoli, carrots, or green beans. A salad would also be a great side dish.

HOW TO MAKE HAMBURGER POTATO CASSEROLE?

  • Step 1. Using a cast-iron skillet (or a non-stick skillet), cook the meat, onions, and bell peppers until the meat is brown and veggies are cooked through. Add salt and pepper to taste

  • Step 2. Add diced potatoes and cook with the lid on, for about 15 minutes on low-med heat stirring occasionally

  • Step 3. If you are using a cast-iron skillet, add the milk and the cornstarch to the pan and stir. If you are using a casserole dish, transfer meat and potatoes to the dish and add the mixture of milk and cornstarch. Place the Provolone cheese rounds on top of the meat and bake in a 350F oven for 15 to 20 mins or until cheese is melted and bubbly.

CAN YOU FREEZE HAMBURGER CASSEROLE?

You can freeze the cooked meat and potatoes, but I wouldn’t recommend freezing with the milk and cheese.

When you are ready to serve it, thaw it completely, put it in a casserole dish, add the milk and cornstarch mixture, top with the cheese, and bake.

RECIPE TIPS:

  1. If you want to cut short the stovetop cooking time, after adding the potatoes immediately add the milk and cornstarch mixture and cook in the oven for 30 minutes instead of 15. Add the cheese after the 15-minute cooking mark.
  2. If you see too much grease in the pan after cooking the meat, drain it.
  3. You can add a little bit of garlic powder along with salt and pepper to give it a little more flavor.
  4. You can use water or beef stock instead of milk if you prefer a non-dairy version.

Ingredients

  • 1 lb lean ground beef
  • 1 cup chopped onion

  • 1 tsp cornstarch to thicken the sauce

    We both loved this! It reminded us of a shepherd’s pie. I used half the beef, potatoes and onions, 3/4 cup frozen veg mix, 1/4 cup green bell pepper and I made the whole amount of sauce using broth instead of milk. I parboiled the potatoes to shorten the cooking time. Even with the recipe cut down, it made plenty for dinner and leftovers for just the two of us.

    Excellent recipe! I used mushroom broth (didn’t have beef broth), added sliced mushrooms and used mozzarella, Havarti & Gruyère cheeses. I’m excited to make this again & again!

      No. The potatoes are added raw—the cook during the process. Just dice them small.

    Love this recipe! You cn add pretty much anything you like! I like to add minced garlic, and beef broth base, it gives it another layer of flavor!
