There’s something so comforting about the smell of warm cinnamon and apples baking in the kitchen and this easy apple cinnamon bread recipe will fill your house of sweet Fall scents. YW.
If you have ever asked yourself, what can I make with bulk apples? –because you were feeling a little excited on your last costco trip and now your counter is overflowing with fruit– because I have. In fact, I asked myself that very question just last week.
I was inspired to make this recipe not just for my love of apple baked goods but my love for Apple Crumble Pie Bars that I made a couple months ago.
Ingredients For This Apple Bread Recipe
- apples – I prefer Granny Smith apples for tartness but whatever type of apple you prefer, will work in this recipe!
- organic sugars – organic light brown sugar, organic cane sugar, organic powdered sugar are used in this recipe.
- all purpose flour – For the ultimate fluffiness, use an all purpose flour. This recipe hasn’t been tested with gluten-free baking flour so proceed at your own risk.
- almond milk – any plant based milk will work here
- vegan butter – for a buttery cake flavor, don’t sub this ingredient but if needed, oil will work
- apple sauce – since there’s no eggs in this recipe, I used applesauce to help bind the ingredients together
- cinnamon, nutmeg and salt – all help to enhance the flavors
- baking powder – this acts as a rising agent so the loaf is fluffy and light.

Before we get started, you will need:
- 9×5 or similar sized loaf pan
- parchment paper
- mixing bowls
- whisk
- rubber spatula
Let’s get baking!
How to Make Apple Bread
- Start by preparing the apples. Wash and peel apples and then chop them into half inch cubes and then toss them in cane sugar and cinnamon, set aside.
- Next, make the brown sugar filling by stirring together the brown sugar and cinnamon, set aside.
- To make the loaf cake, whisk together all the wet ingredients. In another bowl, stir together the dry ingredients and then add them together. Whisk just until no spots remain–try not to over mix.
- Assemble this apple bread recipe by pour half of the cake loaf batter into a prepared loaf pan. Top with half of the brown sugar cinnamon filling and half of the apple mixture. Use a knife to swirl the ingredients into the batter just slightly. Top with remaining batter, brown sugar cinnamon mixture and apples. Swirl the apples into the batter just slightly and then bake for 55-65 minutes and toothpick comes out clean when inserted into the center.
- Finish and enjoy. Once the bread has cooled, drizzle with glaze and serve.

- 2 small granny smith apples about 1½ cups when chopped
- 2 tbsp organic cane sugar
- 1 tsp cinnamon
- pinch nutmeg

- ¼ cup organic brown sugar packed
- 1 tsp cinnamon

- 2 cups all purpose flour spooned and leveled
- 1 cup organic cane sugar
- 1 tbsp baking powder
- ¼ tsp finely ground sea salt
- 1 cup almond milk or plant milk
- 5 tbsp vegan butter melted
- ¼ cup applesauce unsweetened
glaze
- ¼ cup organic powdered sugar
- 1-2 tbsp almond milk or plant milk
Instructions
Start by preparing the apples.Wash and peel apples and then chop them into half inch cubes and then toss them in cane sugar and cinnamon, set aside.
Next, make the brown sugar fillingby stirring together the brown sugar and cinnamon, set aside.
To make the loaf cake,whisk together all the wet ingredients. In another bowl, stir together the dry ingredients and then add them together. Whisk just until no spots remain–try not to over mix.
Assemble this apple bread recipeby pour half of the cake loaf batter into a prepared loaf pan. Top with half of the brown sugar cinnamon filling and half of the apple mixture. Use a knife to swirl the ingredients into the batter just slightly. Top with remaining batter, brown sugar cinnamon mixture and apples. Swirl the apples into the batter just slightly and then bake in an oven pre-heated to 350 F° for 55-65 minutes and toothpick comes out clean when inserted into the center.
Finish and enjoy. Once the bread has cooled, stir together the glaze until you reach your desired consistency and dirzzle over loaf. Cut into slices using a sharp knife and serve.
Notes
This cake is best if stored at room temperature for up to 4 days wrapped in plastic or refrigerated for 6 days. To freeze, place the loaf in an airtight and freezer safe container or plastic zip bag and freeze for up to 3 months.

This bread was so good! Perfect amount of sweetness and tasted just like an apple fritter!

I’ve tried to cook this for extra time and even microwave it to try and good it and it is still just a goopy water mixture. I’ve never had this problem! Any suggestions? It looks like an oily substance is just running off the top.
