Way back in the day, before Mel and I had Jordan, we’d go out for really nice dinners a lot. You know, before the kid took all the extra income and we could afford to go for a steak dinner or fancy French meal every Saturday night. (Man, kids, right?)

Our favorite thing to do after indulging on a rich meal and bottle of wine would be to get an after-dinner drink. We’d be too full for dessert, but not want to head home yet, so we’d order a glass of Irish Cream over ice. There is something so grown-up aboutordering a shot of a something after eating a nice meal. We’d sip our drinks, enjoying the smooth warmth, finish our conversation, and then head home, where I’d be hungry again and I’d raid the cookie closet.

I don’t know why Irish Cream is only really celebrated around St. Patrick’s Day. Is it because it’s Irish and that’s the holiday? I don’t know about you, but I love it all year long…especially in my coffee. I’ve been known to slip a nip or two in my coffee when I’m on vacation.

In my quest to turn everything into a dessert (and a pie) I’ve decided to take my love of Irish cream and marry it with a co*cktail. I’m loving creating new co*cktails for you guys; they’re some of my favorite creative work. Pudding shots, frosting shots, lemon cake co*cktails…I can’t get enough. The brainstorming goes on for days. So, just in time for St. Patrick’s Day, let me introduce an Irish Cream Pie co*cktail: flavors of Irish cream with vanilla vodka and coffee and a shortbread cookie rim.

Here’s the thing: whenever I think about anything Irish cream, I also think about Walkers Shortbread. Now I know Ireland and Scotland are two different countries, but they’re close to each other. I’m pretty sure I have both heritages in me too, so why not meld them to make the perfect drink? Plus, is anyone going to say NO to a shortbread cookie rimmed co*cktail?

(Anyone who said no cannot be my friend, lol.)

As always, this Irish cream pie co*cktail recipe is super easy to make. It takes longer to find all the liquor bottles in your liquor cabinet than it does to assemble it.

Oh, you don’t have a liquor cabinet that has a gazillion bottles in it? You must not be a food blogger. 😉

Simply crush some Walkers Shortbread cookies to rim your glass with (dip the glass in honey or corn syrup, then coat in crumbs), then shake together Irish Cream, coffee, vanilla vodka (regular or whipped in a pinch), and some milk. This serves 2 generously (4 over ice) and is perfect for a date night in or even an at-home after dinner drink after your next fancy dinner.

Ingredients

  • 6 ounces Irish Cream
  • 2 ounces vanilla vodka
  • 4 ounces cold coffee
  • 2 ounces milk
  • Ice if desired
  • Honey or corn syrup for rimming glasses
  • Walkers Shortbread Cookies for dipping and garnish

Instructions

  • Crush one shortbread cookie and place on a shallow plate. Place honey or corn syrup on another shallow plate. Dip each glass upside down in the honey and then in the cookie crumbs to rim.

  • Place Irish Cream, vodka, coffee, and milk in a co*cktail shaker with ice. Shake, then strain into glasses. Serve over ice, if desired.

  • Serve with more shortbread cookies for dipping.
